Take a new spin on summer snacking with this surprisingly refreshing vegan poke made with cubed fresh watermelon. Serve it alongside our captivatingly crunchy Super Seed Seaweed & Black Sesame Crackers.

Ingredients

3 cups of watermelon
¼ cup scallions
Super Seed Seaweed & Black Sesame Crackers

For marinade:
Juice of one whole lemon
3 tbsp toasted sesame oil
3 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp toasted sesame seeds
1 tbsp mirin

Preparation

Cut 3 cups of watermelon into small cubes. Mix marinade ingredients in a bowl to create a sauce. Let watermelon cubes marinate in sauce for 30 minutes. Transfer to a serving bowl and garnish with chopped scallions. Serve with Mary’s Gone Crackers Super Seed Seaweed & Black Sesame Crackers.
