Rainbow Vegan Bruschetta

Bring some brilliantly bright bites to your next event! This Rainbow Vegan Bruschetta stars our temptingly toasty Original Crackers.


4 rainbow carrots, diced
3 watermelon radishes, diced
½ red bell pepper, diced
8 stalks asparagus, diced
1 tbsp olive oil
1 tsp lemon juice
½ tsp salt
Pepper to taste
4-6 chives, chopped finely

Preheat oven to 400°. Wash and prepare the vegetables. Peel the carrots and watermelon radishes, then cut all vegetables down into small pieces (approx. one-quarter inch in size). Add all of the chopped vegetables into a medium bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper. Spread the vegetables out on a baking sheet. Bake for 10 minutes. Spoon the baked mixture on top of individual Original Crackers, top with chives and serve.
