Cauliflower Ceviche

Our outrageously zippy Super Seed Jalapeño Crackers make a craveably crisp foundation for… wait for it… cauliflower ceviche!


3 medium tomatoes, diced
½ small head of cauliflower, chopped into little cubes
Fresh lime juice (use 4 limes)
1 jalapeño, minced
½ red onion, chopped
½ tsp salt
Black pepper to taste
Super Seed Jalapeño Crackers


Combine all ingredients. Refrigerate overnight to marinate. The next day, taste the ceviche to see if you want to make any seasoning adjustments. Serve on top of Mary’s Gone Crackers Super Seed Jalapeño Crackers.
