Our Herb Crackers add crunchtastically tasty texture to these savory Vegan Stuffed Mushrooms.
1 lb of small cap mushrooms, cleaned and de-stemmed
1 cup finely crumbled Herb Mary’s Gone Crackers
1 cup of chopped artichoke
½ cup soaked cashews (save the soaking water)
3 cloves of garlic
1 tbsp nutritional yeast
½ cup fresh spinach
Salt and pepper to taste
Preheat the oven to 350 degrees. Finely puree the soaked cashews and garlic cloves, adding the cashew soaking water as needed to create a creamy sauce. Season the sauce to taste with salt and pepper. Except for the mushroom caps, combine all of the ingredients with the cashew sauce. Fill the mushroom caps with the cashew sauce mixture. Bake for 15-25 minutes and serve warm.
