Vegan Cheese Ball

INGREDIENTS

  • 1 ½ cup raw cashews
  • 1 ½ cup raw sliced almonds
  • ½  cup fresh lemon juice
  • 2 cloves garlic, minced
  • ¾ cups water
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 1 tablespoon parsley, chopped

PREPARATION

  • In a medium bowl, cover the 1 cup of raw cashews and 1 cup of almonds with boiling hot water. Let them soak for 5 minutes
  • Drain the cashews and almonds and add to a food processor or blender along with the lemon juice, garlic, salt, parsley, and olive oil.
  • Blend until smooth, 1-2 minutes, scraping down the sides as needed.
  • Place the mixture in cheesecloth and tie to contain. Place the ball in a strainer over a bowl and leave in the fridge to strain for 4-6 hours or overnight
  • When ready to serve, unwrap the cheese ball and roll it gently in a ½ cup of chopped cashews and almonds until coated
  • Serve with any of our delicious crackers, we recommend our Original Herb
