
INGREDIENTS
6 large red bell peppers, halved and seeds removed
1 pound ground Turkey Sausage
1 large yellow onion, diced
2 cloves of garlic, minced
2 medium zucchini, diced
1 (15oz) can tomato sauce
1 tablespoon dried oregano
2 cups crushed Original Herb Crackers
Salt and pepper to taste
1 cup shredded Monterey Jack Cheese
4 tablespoons grated Parmesan cheese
PREPARATION
Preheat the oven to 375
Heat a large skillet to medium high
Add the sausage to the heated pan and brown until almost cooked
Add the onion and garlic, cook for 3-4 minutes before adding the zucchini
Add the tomato sauce and season with oregano, salt and pepper; simmer for 2-3 minutes
Remove from heat and add 1 1/2 cup of cracker crumbs
Salt and pepper to taste
Spoon filling into the prepared peppers
Place peppers cut side-up in a 9″-x-13″ baking dish
Bake for 30 minutes before adding both cheeses and remaining cracker crumbs to the top of the peppers
Optional: broil to brown the cheese
