INGREDIENTS
- 4 rainbow carrots, diced
- 3 watermelon radishes, diced
- ½ red bell pepper, diced
- 8 stalks asparagus, diced
- 1 tbsp olive oil
- 1 tsp lemon juice
- ½ tsp salt
- Pepper to taste
- 4-6 chives, chopped finely
- Original Mary’s Gone Crackers
PREPARATION
Preheat oven to 400°. Wash and prepare the vegetables. Peel the carrots and watermelon radishes, then cut all vegetables down into small pieces (approx. one-quarter inch in size). Add all of the chopped vegetables into a medium bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper. Spread the vegetables out on a baking sheet.
Bake for 10 minutes. Spoon the baked mixture on top of individual Original Mary’s Gone Crackers, top with chives and serve.
