INGREDIENTS
For the salad:- 1 pkg Lotus Foods Pad Thai Rice Noodles
- 2 cups purple cabbage
- ½ cup sliced red bell pepper
- ½ cup sliced yellow bell pepper
- 1 cup shredded carrots
- 2 green onions, sliced
- ⅓ cup fresh cilantro
- ½ cup sunflower seed butter
- 1 tbsp each of: lime juice, soy sauce, rice wine vinegar, sriracha, honey
- 1 tsp sesame oil
- ½ tsp salt
- 1 handful of Super Seed Jalapeño Crackers, crumbled
- 2 tbsp chopped cilantro
PREPARATION
Place noodles in a large bowl. Add boiling water until the noodles are submerged. Stir consistently for 5-7 minutes until thoroughly cooked. Drain and rinse with cold water. Place in the refrigerator to chill.
In a small bowl, add dressing ingredients and stir until smooth and creamy. If thinning is needed, add water and/or more lime juice.
In a large bowl, mix the salad ingredients and cold noodles. Drizzle with dressing. Toss until well-coated. Garnish with crumbled crackers and chopped cilantro.
