INGREDIENTS
- 1 seedless watermelon
- 1 cucumber
- ¼ red onion
- ⅓ cup pitted kalamata olives
- ½ cup torn mint
- Feta to taste, crumbled
- 2 tsp olive oil
- 2 tsp red wine vinegar
PREPARATION
Cut watermelon, cucumber, onion and olives into bite-sized pieces. Place in a large bowl. Season with salt and pepper to taste, then add mint and feta. Toss gently to combine. Next, combine olive oil and vinegar in a bowl. Pour dressing over salad and stir together.
