Mango, Mint and Nopales Salsa

INGREDIENTS

2 organic mangos, peeled, pitted, and diced 2 limes 2 nopales, cleaned, diced 1 avocado (if nopales aren’t available) 1 organic red pepper, diced 1 organic green pepper, diced 1 organic red onion, diced 1 organic jalapeno, diced 5 mint leaves, chopped 1 tablespoon of extra-virgin olive oil Pinch of salt Pinch of sugar

PREPARATION

Wear gloves to protect your hands

Place cactus paddle (nopales) on cutting board and using a sharp knife or vegetable peeler scrape the spines and trim off the edges

The cactus will release a sticky substance

Wash and dice nopales and cook in salted water for 15 minutes

Drain and rinse

Place the nopales in a bowl

Add mango, red and green pepper, jalapeno, onion, mint, lime juice, oil, salt and sugar

Mix all ingredients

Serve chilled
