
INGREDIENTS
4 large yellow tomatoes, roughly chopped (or a container of golden cherry tomatoes) 4 ears of fresh corn, removed from the cob (reserve some for garnish) 4 scallions, roughly chopped 1 1/2 tablespoons sherry vinegar 1 tablespoon fresh lemon juice 1 clove garlic, roughly chopped 1 cup coconut milk 1 teaspoon salt Pinch of white pepper to tastePREPARATION
Place all ingredients in a high power blender.
Puree until smooth.
Strain through a sieve.
Chill.
Garnish with additional scallions or cilantro (parsley)
