Turkey Sausage & Zucchini Stuffed Peppers

Summer produce is at its peak! Here’s a light summer meal showcasing the best fresh veggies for this time of year.


  • 6 large red bell peppers, halved and seeds removed
  • 1 pound ground Turkey Sausage
  • 1 large yellow onion, diced
  • 2 cloves of garlic, minced
  • 2 medium zucchini, diced
  • 1 (15oz) can tomato sauce
  • 1 tablespoon dried oregano
  • 2 cups crushed Original Herb Crackers
  • Salt and pepper to taste
  • 1 cup shredded Monterey Jack Cheese
  • 4 tablespoons grated Parmesan cheese


  • Preheat the oven to 375
  • Heat a large skillet to medium high
  • Add the sausage to the heated pan and brown until almost cooked
  • Add the onion and garlic, cook for 3-4 minutes before adding the zucchini
  • Add the tomato sauce and season with oregano, salt and pepper; simmer for 2-3 minutes
  • Remove from heat and add 1 1/2 cup of cracker crumbs
  • Salt and pepper to taste
  • Spoon filling into the prepared peppers
  • Place peppers cut side-up in a 9″-x-13″ baking dish
  • Bake for 30 minutes before adding both cheeses and remaining cracker crumbs to the top of the peppers
  • Optional: broil to brown the cheese
