
Roasted Beet Spread

Ingredients:
- 3–4 medium to large beets
- 1 cup Nancy’s Cream Cheese
- 1 Tbsp olive oil
- 3 garlic cloves, minced
- 1 Tbsp Maple Syrup
- 1 tsp Apple Cider Vinegar
- 2 Tbsp Goat Cheese
- Salt and pepper to taste
- Fresh chives
Preparation
- Preheat oven to 400° F. Wash the beets and then wrap them individually in alumnimum foil. Bake for about an hour or until slightly soft.
- Let the beets cool and then peel off the skins. Place the beets in a food processor and pulse for 2-5 seconds. Add the oil, cream cheese, garlic, maple syrup, vinegar, salt and pepper and blend.
- Transfer the mixture to a bowl, top with goat cheese and chives. Enjoy on Super Seed Classic.
