Roasted Beet Spread

  • 3–4 medium to large beets
  • 1 cup Nancy’s Cream Cheese
  • 1 Tbsp olive oil
  • 3 garlic cloves, minced
  • 1 Tbsp Maple Syrup
  • 1 tsp Apple Cider Vinegar
  • 2 Tbsp Goat Cheese
  • Salt and pepper to taste
  • Fresh chives


  1. Preheat oven to 400° F. Wash the beets and then wrap them individually in alumnimum foil. Bake for about an hour or until slightly soft.
  2. Let the beets cool and then peel off the skins. Place the beets in a food processor and pulse for 2-5 seconds. Add the oil, cream cheese, garlic, maple syrup, vinegar, salt and pepper and blend.
  3. Transfer the mixture to a bowl, top with goat cheese and chives. Enjoy on Super Seed Classic.
