Mango, Mint, and Nopales Salsa

The summer is heating up, so your salsa should too! If you can’t find nopales in your area, it’s just as delicious with avocado. This salsa has a kick to it but will leave you feeling refreshed.

Prep time: 30 minutes

Ingredients:

  • 2 organic mangos, peeled, pitted, and diced
  • 2 limes
  • 2 nopales, cleaned, diced
  • 1 avocado (if nopales aren’t available)
  • 1 organic red pepper, diced
  • 1 organic green pepper, diced
  • 1 organic red onion, diced
  • 1 organic jalapeño, diced
  • 5 mint leaves, chopped
  • 1 tablespoon of extra-virgin olive oil
  • Pinch of salt
  • Pinch of sugar

Preparation:

  • Wear gloves to protect your hands
  • Place cactus paddle (nopales) on cutting board and using a sharp knife or vegetable peeler scrape the spines and trim off the edges
  • The cactus will release a sticky substance
  • Wash and dice nopales and cook in salted water for 15 minutes
  • Drain and rinse
  • Place the nopales in a bowl
  • Add mango, red and green pepper, jalapeno, onion, mint, lime juice, oil, salt and sugar
  • Mix all ingredients
  • Serve chilled
